Cauliflower Fried Rice

Ingredients:
1 head of cauliflower florets grated
1/2 cup diced carrot
1/2 cup peas
1/2 cup sweet onion diced
1/3 cup sliced green onions
1 clove of garlic grated
1 tsp freshly grated ginger root
4-6 tbsps soy sauce
4-6 tbsps teriyaki sauce
S & P to taste
3 tbsps organic extra virgin olive oil
2 eggs scrambled 

Directions:
Step 1 - Grate your cauliflower and prepare your other ingredients. Cook your eggs and set aside. On a medium high heat sear your veggies for 3 minutes, set aside. Very important, cook your cauliflower on a medium high heat (do not season) 3-4 minutes. Doing this will insure that the starches set and the cauliflower doesn't become mushy. Once cooked then add all of your ingredients and toss for another 2 minutes on medium high heat. That's it, serve and enjoy! I was definitely skeptical as I love my carbs, but this was really yummy :)
