Chocolate Crinkle Cookies

1 cup granulated sugar
6 tbsps. butter at room temperature 
2 eggs
1/4 cup +3tbsps. Hershey's special dark cocoa
2 tsps. vanilla extract
1 1/4 cup unbleached all purpose flour
1 tsp. baking powder
1/4 tsp salt
1/3 cup confectioners sugar for rolling 

Step 1 - Using the paddle attachment blend the butter and sugar together until combined. Run on a low speed adding in your vanilla, baking powder and salt. Then add in your. Hershey's cocoa and flour until combined on low speed, stop to scrape the sides of the bowl then run again for another minute to make sure all of the ingredients are incorporated evenly. 
Step 2 - Take 1 tablespoon of dough and roll into a ball between your hands, roll in confectioners sugar and pat down into a disc. Place on a cookie sheet and chill for 30 minutes - 1 hour. After chilling  pre-heat your oven to 350 degrees and space cookies inches apart on a cookie sheet. Bake for 11-13 minutes total, rotating your cookie sheet half way through. Enjoy with your family, these are lovely!!
