1 box (1 lb.) thick spaghetti cooked to aldente as the package directs
1 cup sweet onion sliced
1 cup organic bella mushrooms sliced
1 red bell pepper sliced
1 cup broccoli florets
1 cup sugar snap peas sliced
6 tbsps. organic extra virgin olive oil
6 tbsps. soy sauce
4-6 tbsps. Thai sweet chili sauce
salt and pepper to taste
Step 1 - Bring your water to a boil and cook the spaghetti noodles to aldente as the package instructions state. In a saute pan bring your olive oil up to a medium heat and add in your onions. Sprinkle with salt and pepper and toss occasionally until they become translucent. Add in half of your soy sauce along with the broccoli and let cook for 4-5 minutes. Finally add in your mushrooms, pepper, snap peas, sweet chili sauce and remaining soy sauce bringing up to a medium-high heat stirring occasionally for about 3-4 minutes.
Step 2 - Add in your spaghetti and toss for another 2-3 minutes. This will allow the pasta to finish cooking in the veggies and sauce making the flavor more intense. Serve immediately and enjoy!
