Rainbow Veggie Salad w/Vinaigrette

1 cup sweet corn kernels
2 cups edamame
1/3 cup finely diced red onion
1 cucumber peeled and diced
1 cup red pepper diced
Red Wine Vinaigrette

Yields: 6 Servings

Step 1 - Prepare the veggies (I peel and deseed the cucumber) and place in a container. Make or use your favorite vinaigrette, you can find the recipe for my red wine vinaigrette under the recipe index or the link above. Toss together and store in the fridge, it is a perfect guilt free snack :) Enjoy!
