Cinnamon Sugar Artisan Bread

Ingredients:
4 cups unbleached bread flour
3 tbsps. honey
3 tsps. kosher salt
2 cups very warm water
vegetable oil to coat bowl and loaf prior to baking (1 tbsp.)
1/ 4 cup cinnamon sugar mixture

Directions:
Step 1 - Combine all of your ingredients in your mixer on low speed using the dough hook attachment except for the vegetable oil and cinnamon sugar mixture until the dough comes together. Coat a large bowl or use the mixer bowl with vegetable oil and let the dough double in bulk or 1-2 hours. 
Step 2 - Punch down the dough to release the air and shape on a counter top into an 10in x 10in square approximately.  Sprinkle the cinnamon sugar evenly across the dough, then roll tightly together and make into a loaf shape. Let it rest and place a piece of parchment paper in the bottom of your dutch oven.  Place the loaf inside and lightly brush or dab with vegetable oil.  Place the lid on and let rise a second time for 2 hours.
Step 3 - Pre-heat your oven to 450 degrees and make two cuts in the top of the dough.  Bake fore 28 minutes with the  lid on, then remove the lid and lower the temperature to 375 degrees. Bake for another 7-10 minutes or until a deep golden brown color has been achieved. Let cool slightly and enjoy!  (My kids loved a slice of this with hazelnut spread as a part of their lunches.)
