Vanilla Lemon Spritz Spring Cookies

3 1/2 cups unbleached all purpose flour
2 tsps. baking powder
1 cup sugar
2 tsps. pure vanilla extract
zest and juice from 1 organic lemon
1 1/2 cups room temperature butter
1/2 tsp. salt
1 egg
1/8 cup colored sugar crystals for decorating

Step 1 - Cream your butter, sugar and vanilla in a mixer using the paddle attachment on medium speed for 30 seconds. Then add in your egg, baking powder, salt, lemon juice and zest. Blend on low-medium speed for 30 seconds. Slowly incorporate your flour until all of the ingredients are incorporated evenly.  Pre-heat your oven to 375 degrees and line a baking sheet with parchment paper.
Step 2 - Using your cookie press fill a baking sheet with a spring shaped cookie (I used a flower shape) and sprinkle your sugar crystals over each cookie and bake for 8-10 minutes until the edges are golden brown.  Remove and let cool, enjoy!
