1/2 cup organic dried elderberries
2 cups water
4 tbsps. unflavored gelatin
1 tsp. stevia or 1 1/2 tbsps. sugar
2 tbsps. lemon juice
Directions:
Step 1 - Boil two cups of water. In a large liquid measuring cup (I used a 4 cup capacity) measure 1/2 cup of your dried organic elderberries. Pour the boiling water over your elderberried and let steep for 20-25 minutes.
Step 2 - Strain with a fine metal strainer your elderberry liquid back into your pot. Then on low heat mix in your sugar or sugar substitute, gelatin, lemon juice until dissolved.
Step 3 - Pour into a silicone mold of your choice, place on a cookie sheet and refridgerate until set (this will depend on how deep your mold is, my mold was shallow so about 3 hrs.). Pop out onto a sheet of parchment paper and cut to size. I cut each into 4 pieces. Then I placed them into a large container and added 1/8 tsp. cornstarch, placed the lid on and gently tossed to make sure the gummies won't stick together. Much more tolerable than elderberry syrup, especially for the kiddos!
