Sweet Lemon Berry Mini Loafs

3 cups flour
3 eggs
3 cups frozen mixed berries
zest  of 1 organic lemon
juice from 1/2 organic lemon
1 1/2 tsps. baking powder
3/4 cup melted butter
2 tsps. pure vanilla extract
1 1/2 cups milk (I used 1%)
1 cup sugar
1/2 tsp. salt

Yields - 6 Mini Loafs

Step 1 - Mix your dry ingredients, then incorporate your wet ingredients using a whisk. Finally fold in your berries with a spatula. Pre-heat your oven to 350 degrees, spray your mini loaf pans with canola spray, fill 2/3 the way full and bake for 38-42 minutes. A toothpick placed in the middle should come out clean without dough when cooked through.  Wonderful treat with your morning coffee or tea!
