Organic Red Kale Salad w/Sweet Parmentino Lemon Dressing

3 cups thin cut organic red kale
1/2 tbsp. organic extra virgin olive oil
1 1/2 tbsps. freshly grated parmentino cheese
1 tsp. local honey
1/8 tsp. kosher salt
juice and zest from 1/2 an organic lemon
To top:
2 tbsps. thinly sliced red bell pepper
1/4 of a cucumber diced cucumber

Step 1 - Slice, rinse and pat dry your organic red kale.  Add remaining ingredients and massage them into the kale for 30 seconds with your hands.  This is a meal size portion for one or a side for 2 adults.  Top with the red pepper, cucumber and quick grate of the pimento cheese.
