Whole Wheat Chocolate Chip Cookies

1 egg
2 tsps. pure vanilla extract
3/4 tsp. salt
2/3 cup granulated sugar
2/3 cup light brown sugar
1 cup butter at room temperature
1 tsp. baking soda
1 cup semi-sweet chocolate chip cookies
1 1/4 cups unbleached whole wheat flour
1 cup unbleached all pourpose flour

Step 1 - Cream your butter, sugars, egg, vanilla, salt and baking soda for 1-2 minutes on a low-medium speed with the paddle attachment in your mixer.
Step 2 - Add in your flours and slowly mix to combine until incorporated. Then add in your chocolate chips until dough comes together. Pre-heat your oven to 375 degrees and line a baking sheet with parchment paper.  Use your smallest cookie scoop or tablespoon amounts onto the cookie sheet and bake for 9-11 minutes or until light golden brown in color.
