Coconut Oil Biscuits

Ingredients:
1 3/4 cup unbleached all purpose flour
1/4 organic coconut oil
2 tsps. baking powder
1/2 tsp. salt
3/4 cup milk (I used 1%, you could also use coconut milk, almond milk, etc.)
 
Directions:
Step 1: Mix your dry ingredients with the dough hook attachment, then add your coconut oil and milk until your dough comes together.  Roll out onto a piece of parchment paper and a small biscuit cutter (2 1/2 in. round is what I used and the recipe yielded 12 biscuits). 
Step 2: Place the parchment paper with the biscuits on your baking sheet, cook for 10-13 minutes until they look fluffy and golden brown.  Remove and enjoy (only 109 calories)!
