Fluffy Pie Crust


2 cups unbleached all purpose flour
2 tbsps. shortening
4 tbsps. cold water
6 tbsps. cold butter cubed
2 tsps. sugar

Step 1: Place your flour, sugar and salt into your food processor (I have a very small one, you don't need a big fancy one). Pulse for 10 seconds three times to incorporate the ingredients evenly.  Then add in your cold diced butter and shortening and pulse until the dough resembles pea sized balls. Add in your water 2 tbsps. at a time and continue to pulse for 10 second increments, adding the remaining 2 tbsps. of water until the dough comes together.
Step 2: Roll out on a floured parchment paper and use in your favorite pie recipe.  Typically bake for 15 minutes or until golden brown at 400 degrees.
