Ingredients:
1 recipe pie crust (http://jbirdbaker.blogspot.com/2014/06/fluffy-pie-crust.html)
3 granny smith or gala apples peeled and sliced thinly 2 tbsps. granulated sugar
1 tbsp. light brown sugar
1.5 tsps. ground cinnamon
1 tbsp. unbleached all purpose flour
Directions:
Step 1: Pre-heat your oven to 400 degrees and lightly spray a muffin tin with canola oil. Using a 4 inch diameter circle biscuit/cookie cutter cut out your dough rounds and tuck into the muffin openings and bake the crust by itself for 5 minutes (this will ensure that you do not get a soggy crust). While the crusts are baking take the remaining dough and cut out shapes using mini cookie cutters/stamps and set aside.
Step 2: Peel and core 3 apples and slice thinly, then toss with the flour, sugar, cinnamon, and brown sugar.
Step 3: Fill each of the pre-baked crusts with a large spoon full of the apple mixture into each mini pie crust, then top with one of your cut outs. Bake for 11-14 minutes until the crust is golden brown. Enjoy by themselves or with a side of berries and whipped cream!
