Summer Veggie Quinoa Salad

1 cup quinoa cooked
1 cup diced cucumber (seeds removed)
3/4 cup diced red bell pepper
1 cup sweet corn kernels
1/2 cup sweet peas
1/3 red onion diced
1/2 cup sliced carrots
1/4 cup red wine vinaigrette
Juice of 1/2 a lemon
1/3 tsp. salt

Step 1: I cooked my quinoa then placed in a large bowl.  Then add in your veggies and mix together with the lemon juice, salt and vinaigrette (I used my own red wine vinaigrette under dips/dressings in the recipe index).  Chill and let marinate for 1-2 hours before serving.  Enjoy :)
