1 bag of your favorite tortilla chips
2 cups of shredded colby jack cheese
2 tbsps. thinly sliced scallions
1/4 cup sliced black olives
1 handful of banana peppers (mild)
1 large red bell pepper diced
2 roma tomatoes de-seeded and diced
Step 1: Pre-heat your oven to broil. Line a baking sheet with parchment paper and spread out tortilla chips to create an even layer.
Step 2: Prepare your veggies and sprinkle them over the tortilla chips evenly. Then sprinkle the cheese over the top. (If you are looking to cut calories find low-fat cheese and use thinner cantina tortilla chips) Place in oven for 1.5-2 minutes, remove and enjoy!!!
