Blueberry Banana Bread


Ingredients:
1 3/4 cup unbleached all purpose flour
1 1/4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 cup (1 stick) butter softened
1/4 cup milk
2 large eggs
1 cup sugar
2 tsps. vanilla extract
1 cup fresh or frozen blueberries
2 over ripe bananas

Yields:
3 Small Loafs 

Directions:
Step 1: Pre-heat your oven to 350 degrees.  Using a mixer with the paddle attachment combine all of the dry ingredients, then add the wet ingredients except for the fruit.  Once that is evenly combined, add bananas and mix at a high speed for 1 minute.


Step 2: Then fold in your blueberries using a spatula, be careful not to pop any of them. Line your loaf pan with parchment paper, cut to fit.  Spray lightly with canola spray. Fill 1/4 full, lightly sprinkle with sugar and place in oven.


Step 3: Bake for 20-25 minutes until golden brown and passes the toothpick test.  Stick a toothpick into the middle of the loaf, it should come out clean if the loaf is done baking.



Step 4: Enjoy, makes a great gift!
