Ingredients:
13 tsps. butter at room temperature
3/4 cup light brown sugar packed
1/2 cup granulated sugar
2 tsps. vanilla extract
1 3/4 cup unbleached all purpose flour
2 eggs
1 1/2 tsps. baking soda
1/2 tsp. salt
1 1/2 tsps. ground cinnamon
2 1/2 cups whole rolled oats
Parchment Paper
Optional/Not Pictured - (1 cup semi sweet chocolate chips, my brother-in-law's favorite add on)
Directions:
Step 1: Pre-heat your oven to 350 degrees. Using your mixer with the paddle attachment cream the butter, vanilla, and sugars together. Then add baking soda, salt and eggs.
Step 2: Slowly incorporate flour, once it is blended evenly add in your whole oats.
Step 3: Line your cookie sheet with the parchment paper, then use a small ice cream scoop and place dough 2 inches apart.
Step 4: Bake for 8-10 minutes depending on your oven, remove when edges are golden brown. Let cool for 3-4 minutes before removing or the cookies will fall apart.
