½ cup unsalted butter at room temperature
¾ cup granulated sugar
½ tsp freshly grated nutmeg
¼ tsp baking powder
1 large egg
1 cup + 2 tbsps unbleached all-purpose flour
¼ tsp salt
1 tsp vanilla extract
¼ cup granulated sugar +1/2 tsp. cinnamon to roll cookies in
Step 1 – Preheat your oven to 350 degrees. Using the paddle attachment on your mixer blend the butter, salt, baking powder, vanilla and sugar together on a medium speed for 30 seconds. Then add in your egg, nutmeg and flour. Blend starting on low speed working up to a medium speed until everything is incorporated. Chill in your refrigerator for 30 minutes.
Step 2 – Remove from the fridge and use a small ice cream scoop, then roll between your hands and toss in the cinnamon/sugar mixture. Slightly flatten and place on a parchment lined baking sheet about 2 inches apart. Bake for 8-10 minutes until lightly golden on the edges. Enjoy!
