Garlic & Parmesan Smashed Potatoes

Ingredients:
24 oz. package of baby potatoes 
1/2 cup freshly grated parmesan
1 tbsp. parsley (dried or fresh)
1 tsp. granulated garlic
1 tsp. kosher salt
1 tbsp. organic extra virgin olive oil

Directions:
Step 1 - Boil potatoes until fork tender 10-15 minutes. Pre heat your oven to 475 degrees and line a baking sheet with parchment paper. Strain potatoes and place spread out on your baking sheet. Use the bottom of a glass to smash each potato, repeat until all potatoes are smashed. 




Step 2 - Lightly brush each smashed potato with olive oil, then sprinkle with the remaining toppings. Cook for 15 minutes until golden brown and crispy. Serve and enjoy!
