Strawberry Bread

1/4 cup light brown sugar
1/2 cup granulated sugar
1 tsp. salt
2 tsps. baking powder
2 tsps. pure vanilla extract
2 eggs
1 cup strawberries sliced and frozen
1/4 cup milk
2 cups unbleached bread flour
1/3 cup butter melted

Step 1 - Cream your butter, sugars, vanilla, eggs, baking powder and salt using the paddle attachment on medium speed for 1-2 minutes.  Then incorporate your flour and milk until the dough (which should resemble batter more than dough) comes together. Gently fold in the frozen strawberries using a spatula.
Step 2 - Pre-heat your oven to 350 degrees.  Line your loaf tin with parchment paper and spray with canola oil for easy removal.  Place your mixture into the loaf pan evening out the top layer so that it is roughly level. Bake for 50-60 minutes or until deep golden brown in color (a toothpick inserted in the middle should come out clean). Enjoy!
