Lemon Blueberry Loaf

3/4 cup sugar
1 tsp. salt
1 1/2 tsps. baking powder
2 eggs
2 tsps. pure vanilla extract
1/3 cup melted butter
2 tbsps. freshly grated organic lemon zest
1 1/2 cups unbleached bread flour
1 cup frozen or fresh blueberries

Step 1 - Preheat your oven to 350 degrees and line your loaf pan with parchment paper (also spray the  exposed sides of the pan with canola spray). 
Step 2 - Combine using medium speed the melted butter, sugar, vanilla, eggs, baking powder and salt using the paddle attachment on your mixer. Then slowly incorporate the flour and zest until the dough comes together (it should look like a thick batter). 
Step 3 - Gently fold in using your spatula the blueberries, it is important to not do this in the mixer or all of your blueberries will get smashed. Then place the mixture into your loaf pan, smoothing out the top so that it is level. Bake for 1hr. -1hr. 10mins., until a toothpick inserted into the middle comes out clean without dough.  Enjoy!
