Purple Kale Salad w/Sweet Lemon Ginger Dressing

3/4 bunch of organic purple kale (ribs removed and rinsed)
1/4 orange bell pepper thinly sliced
1 cup cherry tomatoes halved
1/4 cup pomegranate seeds
2 tbsps. freshly squeezed lemon juice 
2 tbsps. organic extra virgin olive oil
1 tsp. local honey
1/4 tsp. kosher salt
1/4 tsp. freshly ground black pepper
1/2 tsp. freshly grated ginger root

Step 1 - Prepare your kale and pat dry.  Make your dressing, make sure to shake vigorously to create a balanced mixture. Pour over your kale and massage into the kale (this is weird I know, but it helps the kale fibers break down which makes it easier to chew) for 30 seconds - 1 minute.
Step 2 - Gather your pepper, tomatoes and pomegranate seeds and sprinkle over the top. Enjoy!
