Vanilla Wafers

Ingredients:
1 cup (2 sticks) butter at room temperature
3/4 cup sugar
2 eggs
1 tsp. salt
1/2 cup light brown sugar
2 2/3 cup unbleached all purpose flour
1 1/4 tsp. baking powder
3 tsps. pure vanilla extract
(Optional) Sprinkles

Yields: 120 Cookies

Directions:
Step 1 - Using the paddle attachment beat the butter, sugars and vanilla together on medium speed until creamy.  Then add in the eggs, baking powder and salt. Blend on medium speed until incorporated, then slowly add in your flour.  Pre-heat your oven to 325 degrees and line a baking sheet with parchment paper. (Even though the baking temperature seems low, it is important because anything higher will burn the edges quickly.) 
Step 2 - Using your smallest cookie scoop (about a tbsp.), place the dough balls onto your cookie sheet and cut each one in half.  Then roll into a ball, flatten with your hand, press into sprinkles if you want and finally place about 1.5 inches apart. Bake for 13-15 minutes, enjoy!
