Ingredients:
(Batter)
2 3/4 cup unbleached all purpose flour
1/4 cup + 2 tbsps. sugar
1/2 cup light brown sugar
3 eggs
1/4 cup canola oil
4 tsps. baking powder
1/2 tsp. salt
1 3/4 cup milk
1/2 tsp. baking soda
1 tsp. ground cinnamon
(Topping)
8 tbsps. butter cooled slightly
1/3 cup granulated sugar
1 tsp. cinnamon
1/3 cup light brown sugar
Yields - 6 Mini Loaves
Directions:
Step - Place the dry ingredients of the batter into your mixer bowl and blend using the paddle attachment. Then add in your wet batter ingredients and run on low working up to medium speed until batter comes together. Pre-heat your oven to degrees and spray each of your mini loaf tins with canola spray. Fill each tin about 1/2 way with the batter.
Step 2 - Make the crumb topping by combining ingredients in a food processor or use a fork. Sprinkle mixture over each cake and bake for 20-25 minutes or until golden brown and a tooth pick comes out clean when placed into the middle of the loaf.
