Ingredients:
1 cup butter, softened3/4 cup sugar
2/3 cup brown sugar
2 eggs
1 tsp. vanilla
2 1/4 cups flour
1/4 tsp. salt
1 tsp. cream of tartar
1 tsp. baking soda3/4 tsp. cinnamon
(30-35 rolo candies)
Directions:
Step 1: Cream your butter, eggs, sugar, brown sugar and vanilla together using the paddle attachment in your mixer until everything is combined and smooth. Add in your cinnamon, cream of tartar, salt, baking soda and mix on medium speed for 30-45 seconds. For the final step in the dough add in the flour slowly.
Step 2: Pre-heat your oven to 325 degrees and line two baking sheets with parchment paper. Using a medium sized cookie scoop (about 1 tablespoon), take one ball of dough and roll between your hands. Then on a lightly floured countertop spread out the dough by patting down with your fingers. Place a rolo candy in the middle, wrap the edges around and roll between your hands.
Step 3: Place on your lined cookie sheet about 3 inches apart to allow room to spread, bake for 10-13 minutes until the edges begin to turn golden brown. Remove and let cool completely before removing (it is hard to wait, I know!). I must say that this might be one of the best cookies I have ever made!
