Grilled Veggie Pita

1 cup cherry tomatoes (cut in half)
1 cup sliced cucumber
1/2 shredded sharp cheddar cheese
2 cups mixed dark greens
1/2 cup sliced red, green or orange bell pepper
1/4 shredded carrots
1/4 cup sliced celery
1/2 cup sliced red onion
1 tbsp. extra virgin olive oil
salt & pepper to taste
Yields: 2 Pita Sandwiches
Step 1: Prepare all of your toppings.  Heat up a skillet to medium-high heat with the olive oil toss in your bell pepper, onion, celery and carrot (salt and pepper to taste).  Grill for 3 minutes or until desired.  While occasionally stirring the skillet ingredients, line your pitas with the mixed greens.  Finally top with the grilled veggies, cucumber, tomato and cheese. Enjoy, these are delicious and light!
