Ingredients:
1 cup milk
1/4 cup honey
1/4 cup butter
1 tsp. kosher salt
2 1/2 active dry yeast
1/2 cup warm water
2 tsps. sugar
4 cups flour
1 egg
Directions:
Step 1: Scald milk, then incorporate honey, sugar (minus a tsp.), butter and salt using a whisk. Set to the side and let cool to just mildly warm.
Step 2: Combine warm water with a tsp of sugar, then sprinkle active dry yeast over the top. Let sit and react (about 10 mins.).
Step 3: Combine ingredients in a mixer with the dough hook, then slowly add half of the flour. To finish the dough add the egg and remaining flour until it comes together.
Step 4: Remove dough into an oiled bowl, turn to coat and then cover with plastic wrap until doubled in bulk (1-1.5 hrs.).
Step 5: Take out your griddle (350 degrees) or you could use a non stick fry pan. Remove dough onto a lightly floured surface, pinch off fist-fulls of dough and roll out to a circle (mine are never perfect circles, I think it shows character). Once fairly thin place 2-3 depending on size onto griddle and cook for about 1 minute on each side. Remove and continue with the rest of the dough. Enjoy!
