Homemade Pancake/Waffle Mix

Ingredients:
2 cups unbleached all purpose flour
1 tbsp. + 2 tsps. baking powder
2 tbsps. sugar
1/3 tsp. salt
1 tsp. vanilla extract
1 3/4 cup warm water
 
Directions:
Step 1: Combine your dry ingredients in a large bowl.
Step 2: Whisk together to incorporate, then add in the vanilla extract and water. Be sure to stir slowly so that nothing spills over the edge.
Step 3: If you are using this mixture to make waffles like pictured in the recipe, I found that spraying the waffle iron surface lightly with canola oil helps the waffles to release better (even though mine is a "non-stick" surface). Pour about 3/4 cup (using a dry measuring cup) onto your waffle iron and cook for about 2 minutes or until light golden brown.  If you are making pancakes pour 1/3 cup per pancake (using a dry measuring cup), flipping when the first side is golden brown.
Step 4: Top with your favorite fruits, syrup and whipped topping :)
