Marinara Sauce

28 ounce can whole peeled plum tomatoes
1 tsp. kosher salt
1/3 tsp. freshly ground black pepper
1 small yellow or Vidalia onion peeled
2 small scallions
4 garlic cloves
1/4 tsp. red pepper flakes (omit if you do not want a little spice)
2 tbsps. extra virgin olive oil
1/4 cup white/red wine
1 tsp. oregano
Step 1: Place the tomatoes with juice in your blender (I use a Vitamix) first, then add the remaining ingredients.  Run on high speed for 3 minutes if you want a smoother sauce, if you like your sauce more on the chunky side then run on a lower speed for the same amount of time.
Step 2: Store in an air tight container, heat in a skillet and add your favorite pasta, toss to combine and enjoy!!
