Veggie Burritos




Ingredients:
1 large green bell pepper
1 medium red onion
1 cup corn
2 cups shredded lettuce
1 can of black beans
3 cups cooked Spanish rice (I use a steam-able Uncle Ben's, great and only 90 secs)
2 Roma tomatoes diced
2 cups shredded cheese of your choice
4 large tortillas
2 tbsps. olive oil
1 tsp. salt
1 tsp. freshly ground black pepper


Directions:

Step 1: Clean then dice the onion and green bell pepper. Set aside.
Step 2: On a low-to-medium heat the corn and black beans. 
Step 3: Clean then dice the tomatoes and lettuce. Set aside separately.
Step 4: Using a large skillet heat olive oil on a medium-to-high heat, then add onions and pepper. Sprinkle salt and pepper and stir until cooked with a bit of a sear. Set aside in a bowl.
Step 5: Leave the skillet on, but turn down to a medium heat. Take out one tortilla at a time, lightly spray with canola oil. Then cook on each side for about 20 seconds.
Step 6: Make a burrito bar, and line up all of the ingredients and let everyone make their own!! Enjoy :)
