Ingredients:
2 eggs
2 3/4 cups whole rolled oats
1 tsp. ground cinnamon
1/2 tsp. salt
1 tsp. baking soda
1/2 cup sugar
2/3 cup light brown sugar
1 tsp. pure vanilla extract
3/4 cup butter at room temperature
3 cups whole rolled oats
1 1/2 cups unbleached all purpose flour
1/2 cup dried cherries diced
Directions:
Step 1 - Cream your butter, sugars and vanilla together using the paddle attachment on medium speed (about 1-2 minutes, stopping to scrape the sides at least once). Then add in your eggs, cinnamon, salt, and flour until blended together. Add in your whole rolled oats and diced dried cherries, mix on low-medium speed until combined.
Step 2 - Pre-heat your oven to 350 degrees and line a baking sheet with parchment paper. Using a cookie/ice cream scoop or tablespoon, place cookies on baking sheet and bake for 9-11 minutes until edges are golden brown.
