Soft Batch Chocolate Chip Cookies

2 sticks butter at room temperature
1 tsp. pure vanilla extract
2 eggs
1 cup light brown sugar
1/2 cup granulated sugar
3/4 tsp. salt
1 tsp. baking soda
2 1/2 cups all purpose unbleached flour
1 1/2 cups semi sweet morsels

Step 1: Start by creaming the butter and sugars together using the paddle attachment in your mixer for 1-2 minutes.  Then add in your eggs, vanilla, baking soda and salt. Mix on low-medium speed for 1 minute.
Step 2: Pre-heat your oven to 350 degrees and line a baking sheet with parchment paper. Then slowly add in your flour, once the dough comes together add in the morsels.
Step 3: Using your smallest cookie/ice cream scoop place the dough balls about 3 inches apart on the baking sheet.  Bake for 8-10 minutes or until the edges are golden brown.  Remove and let cool for 3 minutes before placing onto a cooling rack.  Enjoy!
