150th Recipe Post: Cranberry Orange Loaf

Ingredients:
2 cups of unbleached all purpose flour
2/3 cup sugar
2 1/4 tsp. baking powder
3/4 tsp. salt
1/2 tsp. baking soda
2 tsps. pure vanilla extract
2/3 cup orange juice
4 tbsps. butter melted
1 cup frozen cranberries thawed
zest of one navel orange
2 eggs
 
Yields: 2 Loafs
 
Directions:
Step 1: Pre-heat your oven to 350 degrees and line your loaf pan with parchment paper and spray with canola oil. 
Step 2: Combine your dry ingredients with the paddle attachment on your mixer.  Then add in the eggs, vanilla extract, baking powder, baking soda, salt, butter and orange juice. Finally add in the zest and cranberries and mix at a slower speed so they do not break up to much. 
Step 3: Fill the loaf pan 1/2 way with the batter and bake for 40-45 minutes or until a toothpick comes out clean after sticking it in the middle of the loaf.
Step 4: Let cool slightly before serving so it slices neatly or wait until fully cooled and give as a gift!
