Ingredients:
1 cup whole oats (ground)
1 cup unbleached all purpose flour
1/2 cup butter (room temperature)
1/4 tsp. kosher salt
1 1/2 tbsps. sugar
1 1/2 tbsps. baking powder
1 tsp. ground cinnamon
1/3-1/2 cup skim milk (substitute for non dairy milk)
Directions:
Step 1: Pre-heat your oven to 400 degrees and grind 1 cup whole rolled oats in your food processor. Combine all of the ingredients except the milk in your mixer with the paddle attachment. Mix on a medium speed until the mixture looks crumbly, then slowly add the milk just until the dough comes together (I used closer to 1/3 cup of the milk).
Step 2: Roll out the dough on a floured surface, until about 1/2 inch thick. Use the biscuit cutter size of your choice (I used a small one and this recipe made 20 biscuits), cut the biscuits and place them on a parchment paper lined baking sheet. Bake for 10-12 minutes until the bottoms become golden brown.
