Greek Yogurt Chocolate Chip Cookies

Ingredients:
2 1/2 cups unbleached all purpose flour
1/2 cup granulated sugar
3/4 cup packed light brown sugar
1 tsp. salt
1/2 tsp. baking powder
1 tsp. baking soda
2 eggs
3/4 cup plain or vanilla greek yogurt
1 tsp. vanilla extract
1 cup mini semi sweet morsels
 
Directions:
Step 1: Pre-heat your oven to 375 degrees, then line a baking sheet with parchment paper and spray lightly with canola oil (I didn't do this the first round and the cookies stuck to the parchment paper).  Combine your dry ingredients in your mixer with the paddle attachment and run on medium speed for 1 minute to evenly disperse them.  Then add in your eggs, vanilla & greek yogurt.  Run on a low-medium speed until the cookie dough comes together.
Step 2: Using your smallest ice cream/cookie scoop (or about a table spoon amount), place the dough about 2 inches apart on the baking sheet (I fit 4 rows of 5 cookies).  Bake for 9-10 minutes until the edges are a light golden brown.  Remove and place on a cooling rack, the recipe makes about 45 cookies :)
