Banana Chocolate Chip Muffins

2 eggs
2 cups unbleached all purpose flour
1 1/2 tsps. baking powder
3/4 cup mini semi sweet morsels
1/4 cup granulated sugar
1/2 tsp. salt
1 tsp. vanilla extract
1 over ripe banana
3/4 cup milk
Step 1: Pre-heat your oven to 375 degrees and place muffin cups into your pan spraying the inside of the cups with canola oil.  Place the dry ingredients into your mixer and blend using the paddle attachment for 30 seconds on a medium speed.  Then add in the remaining items except for the chocolate chips and mix on a medium low speed for 2 minutes.  Finally add your morsels, using a medium sized ice cream/cookie scoop place the mixture evenly into each cup (filling about 3/4 of the way). 
Step 2: Bake for 13-15 minutes or until lightly golden brown edges begin to appear.  The recipe should make approximately 15 muffins.  Enjoy!
