3/4 cup salted butter softened
1 over ripe banana
2 cups unbleached all purpose flour
1 cup whole rolled oats
1/2 cup granulated sugar
1/2 light brown sugar
1 tsp. salt
1 tsp. baking soda
1 cup diced strawberries (frozen is best)
1 cup mini semi sweet morsels
2 tsps. vanilla extract
Yields: Approx. 58 Cookies
Step 1: Cream the butter, sugars and vanilla extract on medium speed with the paddle attachment in your mixer. Then add the egg, salt, baking soda and banana. Blend on high speed for 1 minutes
Step 2: Add in the oats and flour slowly incorporating the ingredients together.
Step 3: Add the chocolate morsels and strawberries, run on a slow speed to keep the strawberries intact.
Step 4: Line a baking sheet with parchment paper and scoop out cookie dough balls using your smallest ice cream/cookie scoop. Place about 2 inches apart. Bake for 9-10 minutes depending on your oven until golden brown.
Step 5: Remove and let cool for 3 minutes before placing on a cooling rack. Enjoy!
