Ingredients:3/4 cup water
1/4 cup extra virgin olive oil
3 cloves minced
1/4 vidalia onion finely chopped
1 tsp. kosher salt
1/2 tsp. freshly ground black pepper
3 ozs. tomato paste
(if you want to add more spice, sprinkle in red pepper flakes)
Directions:
Step 1: Bring your oil up a slightly less than medium heat in your skillet, add in onion, garlic, salt and pepper and let sweat down stirring occasionally. Most importantly watch your garlic, turn down heat if it begins to brown (that means it is burnt).
Step 2: Add in tomato paste and water, stir to incorporate (slowly, you don't want to splatter oil and get burnt). Bring up to a medium heat and let simmer for another 4-5 minutes.
Step 3: Add in your favorite pasta and toss to combine, then serve with right away with your favorite herbs (basil, parsley, etc.) or you can let cool and store in the fridge for the next pasta night :)
