1/4 cup coffee liqueur
3/4 cup freshly brewed coffee (cooled to room temp.)
16 oz. mascarpone cheese
1/4 cup granulated sugar
2 tsp. vanilla extract
1/4 cup espresso or cocoa powder
48 lady fingers
Step 1: Use a 8x8 or 9x9 glass dish. In your mixer with the whisk attachment, combine the vanilla, mascarpone and granulated sugars.  Run on a high speed until a light airy consistency is reached (about 6-8 minutes).
Step 2: In a measuring cup combine the coffee and coffee liqueur, stir to incorporate.  Quickly dip the lady fingers and lay them in the bottom of the dish until one even layer is achieved.
Step 3: Using a spatula spread 1/4 of the cheese mixture evenly across the lady fingers, then sprinkle with powder.
Step 4: Repeat steps 3-4 3 more times. Cover and let rest (overnight is best, for flavors to marinate together).  Enjoy it, it is amazing!
