Marshmallow Fondant

Ingredients:
1 lb. mini marshmallows
1 lb. confectioners sugar (powdered)
4 tsps. vanilla extract
4 tbsps. cold water
vegetable shortening to grease surfaces

Directions:
Step 1: Take your mixer with the dough hook attachment (even the attachment), the counter you will roll the fondant out on, and the rolling pin  and grease with the vegetable shortening to make sure the fondant will not stick.
Step 2: Take a large microwave safe bowl, add the marshmallows and 4 tbsps. cold water.  Run on 30 second increments stirring in between, until marshmallows are melted completely may take 3-5 sessions in the microwave. 
Step 3: Add the marshmallow mixture to your mixer, add the vanilla and half of your confectioners sugar.  Run on a low to medium speed until incorporated, then add the remaining confectioners sugar and repeat the same action.
Step 4: The fondant should come to a large dough ball, this is the time to add coloring if you want.  Remove and roll out with your greased rolling pin, use to cut out decorations for cakes, cookies or anything you choose!
