Ingredients:
2 medium Vidalia onions
2 tsps. salt1 cup skim milk
1 tbsp. apple cider vinegar or white vinegar
1 cup all-purpose unbleached flour
2 tbsps. cornstarch1 tsp. smoked paprika
3 cups panko breadcrumbs
Parchment Paper
Directions:
Step 1: Remove
the outer layer of skin on the onion and cut into rings about ¼-1/3 inch
wide. Separate all of the rings (if you
have kids around, this is a great way to get them involved.
Step 2: Mix the
flour, salt and smoked paprika together with a whisk to incorporate evenly.
Step 3: Pre-heat
your oven to 450 degrees and line two cookie sheets with parchment paper. In a bowl combine half of the flour mixture,
milk, corn starch and vinegar with a whisk to create the batter and set aside.
Step 4: In a
larger circumfrince bowl or a pie dish place panko bread crumbs.Step 5: Start the process of creating the onion rings (1) put into flour mixture to lightly coat (2) submerge in batter and let the excess drip off (3) place and flip in panko bread crumbs to coat and (4) place on baking sheets lined with parchment paper. (Helpful hint, I placed some of the much smaller rings inside of the larger ones when baking)
Step 6: Bake for 10 minutes, then flip over for another ten minutes. Remove and sprinkle with kosher salt (Optional, I did not do this and they were scrumptious!).
