Homemade Veggie Soup

Stock of your choice (I used Knorr Homestyle Chicken Stock (3 starters + 10.5cups water)
Half of a bag of organic baby carrots sliced thickly
Half a bunch of celery sliced thickly
1 small container of mushrooms sliced thickly
6 green onions sliced thickly
1 bag of Mueller's egg noodles
3 tsps. of salt

Step 1: Bring 10.5 cups of water to a boil, then add your choice of broth base and salt. Stir occasionally to combine for 5-10 minutes.
Step 2: Add in veggies and stir to incorporate, turn down to a low heat and put the lid on the pot.  Let simmer for 3hrs until veggies are tender and flavors are incorporated.  Taste to make sure taste to ensure seasoning is to your liking. 
Step 3: About 7 minutes before serving bring up to a boil and add noodles, cook so that the noodles are aldente because they will continue to cook for a while after taking the pot away from the heat (no one wants mushy noodles!). 
Step 4: Remove pot from the heat and serve with your favorite crusty bread, the above picture features the bread recipe on my blog :)
