Holiday Sparkle Sugar Cookies

2 tsps. vanilla extract
2 eggs
1/4 tsp. salt
14 tbsps. of butter at room temperature
3/4 cup packed light brown sugar
2/3 cup granulated sugar
2 1/4 cup unbleached all purpose flour
1/2 tsp. baking soda
Variety of colored sugar crystals

Step 1 - Cream the butter, sugars and vanilla in your mixer using the paddle attachment.  Then add in the eggs, baking soda and salt until combined.
Step 2 - At a slow speed incorporate your flour, once absorbed work up to medium speed stopping to scrape the bowl occasionally to ensure ingredients are evenly distributed.
Step 3 - Pre-heat your oven to 375 degrees and line a baking sheet with parchment paper.  Using your smallest cookie/ice cream scoop (or about a tablespoon amount) take each dough ball and roll between your hands.
Step 4 - Set out bowls with your sugar crystals and roll the dough balls through the sugar coating the entire circle.  Place on your cookie sheet and bake for 9-11 minutes or until edges are a light golden brown.  Enjoy, what a treat!
