Dark Chocolate Almond Cookies

1 stick butter at room temperature
1/3 cup granulated sugar
1/3 cup + 1 tbsp. light brown sugar
1 egg
1/4 tsp. salt
1 tsp. baking powder
1 1/4 cup unbleached all purpose flour
1/2 cup chopped dark chocolate
1/2 cup chopped raw almonds
1 tsp. pure vanilla extract
Step 1: Using your stand mixer with the paddle attachment cream the butter, sugar and vanilla extract on a medium speed for 1-2 minutes.  Then add in the egg, salt and baking powder and mix on a medium speed until evenly incorporated.  Run your mixer on a slow speed when adding in the flour.  For the last step of the dough add in the chopped dark chocolate and raw almonds.
Step 2: Pre-heat your oven to 375 degrees and line your baking sheet with parchment paper.  Using your smallest cookie/ice cream scoop place the balls of dough about 2 inches apart, then bake for 9-11 minutes or until the edges are golden brown.  Remove onto a cooling rack and enjoy!
